Soups On!

Well it is getting colder in Jersey so time for soup recipes!! This first one is my daughters favorite and is so easy! Broccoli Cheese Soup! This is creamy and thick and cheesy and comes together quickly! You can even use frozen broccoli! I typically run it under cold water to thaw it some and it works great for a quick week night meal!

Some broth along with cream cheese, cheddar cheese, and heavy cream makes this a simple but flavorful soup. We also puree some of the broccoli which gives it an amazing consistency, just some because we do want some nice chunks of florets.

Avery requests this soup at least once a month and it does freeze well too! You can add more or less cheese too! do let me know if you try it and what you think.

              Broccoli cheese soup   

What we need:

2 TBS butter

3 cups chicken broth

2 cups shredded cheddar

8 oz cream cheese

1 cup heavy cream

2 bags of frozen broccoli florets (or 4 cups fresh)

Salt and pepper to taste

What we do:

  • Run frozen broccoli under warm water to thaw and place in pot with broth OR boil the fresh till tender in the chicken broth
  • In another pot melt butter, cream cheese, heavy cream and the cheddar
  • When broccoli is tender remove some and pulse in blender and return to the pot
  • Add cheese sauce to the broth, salt and pepper to taste and simmer till done
