Pumpkin Part TWO!

Yes it is fall in new jersey so that means the pumpkin recipes have taken over our souls. This is an epic recipe and is featured in my first cookbook. They originally were made as pumpkin cheesecake bars BUT today I made them in my spring form pan! it still came out just as delish!

This is a no bake cheesecake with pumpkin pudding on top! The crust is simply crushed pecans mixed with butter with some pumpkin pie spice added and a little nutmeg. Then pressed into the pan and set in the fridge or freezer. Then we layer the cheesecake then back into the fridge then top with the pudding! I did use sugar free vanilla pudding for the pumpkin pudding and added pumpkin to it along with some spices.

This is a great option for thanksgiving it is so creamy and not overloaded with pumpkin and the cheesecake is NOT too sweet so it mixes perfectly with the creamy sweetness of the pudding. Being that this is a no bake it makes a perfect option to assemble in the morning and let set in the fridge until after dinner! Let me know what you think and if you make it.

What we need:

Crust

2 1/2 cups crushed pecans

4 tbs butter

1Tbs pumpkin pie spice

Cheesecake:

8 oz cream cheese

1/2 cup heavy cream

1 tbs vanilla

1 tsp sweetener

Pumpkin Pudding

1 small box SF vanilla pudding

1 cup canned pumpkin puree

1 tsp vanilla

1 tbs pumpkin pie spice

1 tsp nutmeg

1 cup almond milk

Melt butter and mix with pumpkin pie spice and crushed pecans. press into a greased 8 X 8 baking dish that has then been laid with parchment paper and place in fridge. You can also use a 9-inch spring form pan and next time i will double the recipe for that pan.

Beat cream cheese and vanilla till smooth add heavy cream and sweetener mix well spread cream cheese mixture over crust. Place back in fridge

Mix pudding, pumpkin, vanilla, almond milk, and spices until thickened about 5 mins. Spread on top of cheesecake layer and place in fridge to set at least 2 hours. Remove from pan using parchment to lift and cut into bars!
