Been busy, trying new recipes!!! This is a keeper! a cheesy delish ground beef casserole with cheese and veggies topped with Green Giant Cauliflower tots and more cheese! This is great for a family weekday dinner throw everything in one pot then pour in a casserole dish and bake. Very filling and hearty.
Now as stated before in my other recipes I do sometimes incorporate canned cream soups. They truly work so well and add great texture, thickness and flavor. In this case I use a can of cheddar cheese soup. You do NOT have to use this you can simply make your own with some cream cheese, shredded cheddar cheese, heavy cream and salt and pepper. Melt it down and you have the same thing. I did make this LIVE for the first time ever on my Facebook page! Nikki’s Low Carb Cooking. It came out so well AND some of my members have made it since then and added their own veggies and ideas and loved it.
I only used a can of green beans but next time I will absolutely be adding more veggies such as broccoli, a few carrots too even a can of cream of mushroom soup would be epic! Do check out the recipe below and let me know what you think and what changes you made for your family!
Beefy Cheesy Casserole with Tots
What we need:
1.5 pounds ground beef
1 Can cheddar cheese soup
¼ cup diced onion
2 Tbs butter
3 cloves crushed garlic
1 can green beans
½ cup heavy cream
½ cup chicken broth
2 cups shredded cheddar cheese
2 Tbs paprika
1 Tbs garlic powder
1 Tbs onion powder
2 Tbs Italian seasoning
Salt and pepper
1 bag green giant cauliflower tots
What we do:
Melt butter in a pan. Add garlic and onions and cook until fragrant about 5 mins add ground beef and cook through. Drain access oil
Add all the seasonings, cheese soup, beans, heavy cream, broth and 1 cup of shredded cheddar cheese
Mix well until smooth and all the cheese is melted
Pour into a lightly greased 9 X 13 pan top with remaining 1 cup of cheese followed by the tots laid in a single layer
Bake at 375 about 35-40 mins!
Feel free to add other veggies and mix it up!
