Meatloaf Mac and Cheese Casserole

I wanted to get clever with casseroles and decided why not meatloaf with mac and cheese on top!!! So I made my trusted meatloaf recipe which is a feature in my cookbook and decided to make mac and cheese with my new bag of fusilli pasta from the Al Dente Pasta Company This ended up coming out so much better than I thought and the best part is I have a casserole recipe AND an amazing mac and cheese recipe! They will be listed at the end of the post and will be in my next book!

On the left we have my meatloaf recipe which I serve with a red sauce. I still included my sauce and topped the meatloaf when baking prior to adding the mac and cheese to the meatloaf. I topped with mac and cheese and baked an additional 15-20 minutes. The mac and cheese was so creamy and delish! My daughter enjoyed a bowl before dinner was even ready! I did top the cheese with some shredded cheddar cheese then when serving I drizzled some of my red sauce on top!

This was such a delicious recipe and and all around wholesome family meal! served with a side of veggies it made a great Monday meal! Let me know if you try it and what you think!

Meatloaf Mac and Cheese Casserole   

What We Need:

1 Pound ground beef

1 Egg

1 Slice of low carb bread OR 3 -4 Tbs almond flour

One cap full of A1

Grated parmesan cheese

Half small onion grated fine

3 Tbs Basil

3 Tbs Oregano

3 Tbs Parsley


1 Cup reduced sugar Heinz ketchup

¼ Cup to ½ cup water

1 Tbs Basil

The other half of the onion

2 Tbs parmesan cheese

2-4 Tbs sweetener of your choice

What We Do:

Oven 350F

Mix eggs, A1 grated cheese, wet bread OR almond flour, basil, oregano, parsley, and grated onion.

Add ground beef and mix well

In a pot add the other half of the onion and all sauce ingredients. Adjust to your liking with sweetener, water…etc…taste!

Add some sauce to bottom of an 8 X 8 baking dish

Press the meat into the bottom of the baking dish and press out to the edges.   Bake 30 Minutes

While meatloaf is baking prepare the mac and cheese.

Remove the meatloaf if needed blot the grease with a paper towel. Top with the mac and cheese and bake uncovered an additional 15-20 minutes until the top starts to brown. Heat sauce ingredients and serve on the side with casserole

Mac and Cheese

What We Need:

½ Bag low carb noodles

2 Cups heavy cream

2 Tbs Butter

2 Cups shredded cheddar cheese

4-6 Oz Cream cheese

Salt and Pepper

What We Do:

Cook noodles according to package and set aside

In a medium saucepan melt butter and 4oz of cream cheese. Mix well until the cream cheese is completely melted.

Add heavy cream and shredded cheddar and mix well until melted and well incorporated. If you desire it thicker then add the two additional oz of cream cheese. Finish with salt and pepper

Toss the noodles with the cheese sauce set aside to top the meatloaf OR enjoy as is!
