So the other day Avery and I decided to make this new low carb cookie recipe I have been working on…well lets just say the flavor was good but it sure did not look like a cookie LOL. I knew the batter was a little wet but said lets bake half of them and put the batter in the fridge and see what happens.



They came out flatter than a pancake LOL we had a good laugh BUT the flavors were great! It was a softer chewy type of cookie with nuts and sugar free chocolate chips. We took the batter from the fridge added a little more almond flour and cooked the next batch. Again they did spread BUT not as much! It was very promising and again that flavor was on point! So I will be trying again over the weekend with a few more small tweaks. I even thought of cooking them in a muffin tin! why not? They will hold their shape and maybe get that crispy chew edges on the side! I will update as to how the next batch comes out and will share the recipe when it is successful.



The point is remember trial and error ups and downs just like in your weight loss and fitness journey. Sometimes the first time it doesn’t work out BUT don’t give up!
