Bacon Weave

One of my favorite sammies is a BLT with a good jersey tomato! It is very easy to do as well as make and works absolutely amazingly. I always cook bacon in the oven on a foil lined cookie sheet and place the bacon into a COLD oven! This brings the bacon up to temp slowly and cooks it more evenly. I do this for the weave too but I tend to bake it a little longer because I love crispy bacon! I will not eat or want any chewy bacon.

You start with a pound of bacon and cut it in half and lay 3 pieces horizontally on a foil lined baking pan and fold up every other piece slightly lay one strip vertically and fold down the folded pieces on top of the vertical piece. Repeat this step with alternating layers. Place the pan into a COLD oven and turn heat on to 365F. Once oven beeps at 365F rotate the pan and cook for 15 minutes. Carefully flip each weave and cook until desired tenderness. Like I said I like crispy bacon so I cook for a total of about 25-35 minutes. Because we cut the bacon in half it is the perfect sandwich size! You can leave the bacon whole for bigger weaves.

This is fantastic on low carb bread OR as is using it as the bread! I have had it both ways and both are epic! or leave as a weave and top with avocado and eggs in the morning for a great breaky!
