I love crispy cauliflower! I did NOT want to use panko so I made my own breading! The breading is a feature in my cookbooks! Super simple you take your favorite low carb bread and toast it then run it through a food processor; season with salt and pepper and Italian seasoning! It works great for chicken, veggies, and fish! I decided to microwave the cauliflower for just 4 minutes to get a little tender. Let cool then dipped in egg and into the breadcrumbs! A simple fry in avocado oil until light brown then let drain on a paper towel lined plate. Sprinkle generously with salt when finished!
If you don’t have avocado oil that is ok good ol Olive oil works just fine. Keep a medium heat so you don’t burn the breadcrumbs. I served mine with a little sour cream that I added a few drops of hot sauce to!
This is one easy side dish or a great appy for FOOTBALL! And the dipping sauces are endless!
