Instapot Carrot and Cauliflower Soup

So I was craving my broccoli cheese soup but had this big head of cauliflower sitting on the counter so…I said SELF lets do a cheddar cauli soup and why not try it in the insta pot! And I did LOL. This came together so easy and was so simple. I also had a few baby carrots in the fridge so I figured lets cut them down into matchsticks and throw them in for a sweet touch or you could have used sweet potatoes too! I like a creamy thick cheese soup so I did blend this with my stick blender and so very glad I did!

I also added a good amount of shredded cheddar cheese along with cream cheese and sour cream, whisking at the end while the insta pot was on sauté really did the trick in helping to thicken it. And do NOT worry if you do NOT have an insta pot you can still make this!! Below after the recipe are tips for making on the stove top. And do NOT worry if you do not have a stick blender you can simply use your blender and or food processor just be careful as it will be hot hot hot we do NOT need you getting burned.

My husband Joe loved this and even said he would totally pour this over noodles which made a great point! I just made a cheddar cauli cheese sauce!!! So absolutely feel free to add over cauliflower rice for cheesy rice or your low carb / keto noodles! I however enjoy the soup! Instapot Cauliflower and Carrot Cheddar Soup   

What we need:

4 Cups Cauliflower florets

3 Cups chicken broth

4oz Cream cheese

2 Cups shredded cheddar cheese

½ cup heavy cream

½ cup finely shredded carrots

¼ cup diced onion

2 cloves garlic crushed

1 tsp paprika

2 Tbs butter

2 Tbs sour cream

Salt pepper

What we do:

  1. Sauté the onions, butter and garlic until the onions are translucent and the garlic is fragrant.
  2. Place florets and broth in your Instapot with the onions and garlic (instructions below if you do not have an Instapot) cover and seal the lid. Cook manual setting for 5 minutes. Natural release the steam for 5 then open the valve and let additional steam release.
  3. Open the lid and turn pot off. Puree with a stick blender. If you do not have a stick blender add to a blender or food processor and blend until smooth. Place back in the insta pot and set to sauté.
  4. Add remaining ingredients and whisk until thickened and smooth about 3-5 minutes. Taste and adjust salt and pepper to your liking.
  • If you do not have an Instapot sauté onions and garlic in a stockpot add broth and cauliflower simmer the florets in broth until fork tender. Then proceed with blending and final step.
