So I have quite a bit of Carbquick and decided to give pancakes another try. I added some extracts and Baking soda and powder for some puff and tried the first few pancakes tasting them and adjusting what I wanted. By the time I got to the third one I added a little sweetener to the batter and they ended up perfect!

I then had an idea! HEY! I can make these in my sphere baking mold!! they would be awesome with some sugar free jam or even with ice cream as a nighttime treat! So I poured the rest of the batter into my molds and baked away.


They came out better than I would have thought! They were a nice golden brown and were fluffy and moist! so very good! And having them for a sweet treat with some Ice cream was even better!

Below is the recipe. Please note I get Carbquik at Walmart or online from amazon. It is such a great product I usually use for biscuits. This Pancake recipe is my new favorite and will be in my next cookbook.
Carbquik Pancake Spheres
What we need:
2 Cups Carbquik
½ cup water
½ cup heavy cream
1 egg
¼ cup melted butter
¼ cup sweetener
½ tsp baking soda
1tsp baking powder
1tsp vanilla
1tsp maple extract (optional)
What we do:
- Oven at 350F
- Mix Carbquik, sweetener, baking soda and powder in a bowl. Add remaining ingredients. Mix until just combined some lumps are needed for a fluffy cake!
- Pour ¼ cup of batter into a lightly greased sphere mold. Bake 10 minutes, rotate pan and bake an additional 5 until slightly fluffy and light brown. Carefully remove and add butter and sugar free syrup or even sugar free jam
- Can also be cooked in a pan traditional pancake style.
