Easy Peasy Pizza

So today we had a random and unplanned trip out for lunch where I had a ton of loaded waffle fries. They were amazing, but dinner I decided to get a little healthier lol. SOOOO I have a ton of fresh tomatoes and basil from my garden. I was craving a white pie which is my favorite so I made one!

I used a Joseph’s Low Carb Pita and toasted it in the toaster oven at 350F for about 7 minutes just till light browned and crisp. Then I sliced some of my fresh tomatoes and fresh basil, minced some garlic and threw it into some ricotta with some Italian seasoning, salt and pepper. Once the pita was crisp I spread a layer of ricotta, then laid a perfectly round Crystal Cheese Wrap on top. Followed that up with more ricotta, more garlic that I sliced thin, lets be honest there is no such thing as too much garlic, then the tomatoes and fresh basil! back into the oven for another 5-8 minutes drizzle a little balsamic and BAM an epic white pie!

This absolutely hit the spot, was cheesy, salty, the sweetness from the homegrown tomatoes was amazing, the creamy ricotta was delectable and that finish with the balsamic was the perfect finishing touch. I no longer feel guilty for all the waffles fries I ate LOL!!! Remember to indulge guys and enjoy that family and the moments you have! My Avery loves the place we went to Dooney’s their food is freshly made to order and always delish just look at that smile! memories will last forever! IT IS OK TO INDULGE ONCE IN AWHILE!
